the aroma is reminiscent of an oldschool gentlemans club. leather, rolling tobacco, smoky wood and cigar box… it smells so classy! you can also find notes of dried orange peel, vanilla, cherries, chocolate, raspberries, roses. It is elegant and complex. The wine is light in color and feel, perfectly balanced and with cherries as the prominent fruit and a feel of toasted almond or marzipan sweetness.
egg pappardelle with freshly shaved truffle. truffle and nebbiolo are the best of friends and this one is light enough to carry the simple, but classy dish.
the wine matures in oak for 24 months, 60% of it in small barrique which extracts more tannin and flavour and 40% of it in large oak casks, which round the wine up, allowing it to mature without manipulating the natural product much.
